
The Sarchimor
Contrary to popular belief, "Sarchimor" is not a distinct variety in itself. Rather, it is a group of many varieties with similar parentage, bred to resist coffee rust in different producing countries.
ITS STORY
A highly resilient hybrid: Sarchimor
One of Timor's rust-resistant hybrid plants, called HDT CIFC 832/2, was crossed with the compact Villa Sarchi to create hybrid 361 (H361). The hybrid was nicknamed "Sarchimor" and was created just in time to counter the arrival of leaf rust in the Americas. Sarchimor-derived offspring have given rise to varieties with stable characteristics in various countries: in Brazil, Iapar 59, Tupí, and Obatá; in Honduras, Parainema; in El Salvador, El Cuscatleco; and in Nicaragua, Marseillaise. Short plants with green or bronze shoots, vigor, and high production, well adapted to low and medium altitude areas.

AROMATIC PROFILE
Between cocoa roundness and fruity burst
This coffee reveals a rich and silky body, marked by notes of red fruits and a subtle touch of cocoa.
Its aromatic profile seduces with a medium body, a sweet acidity, and nuances of stone fruits, for a balanced, warm and generous cup.


The imaginary legacy of the Sarchimor
As perfect as a work of art, as fragile as a flower, yet as robust as a coffee bean. The orchid, like the Sarchimor, multiplies in the plantation in several varieties and colors but always embodies the same mysterious, sometimes inaccessible beauty.
