THE STORY BEHIND THE GRAIN

The Catimor variety, the green gold of Finca Renacer and the foundation of our plantation, whose lands are watered by raging waterfalls essential to the life of each grain.
Water, constant and sometimes powerful, is an important presence on the plantation. Its strength favors crops, sometimes to the detriment of pickers, and it is essential to the mountain lifestyle. It is in homage to this precious water that we named our first coffee, La Corriente, the Spanish translation for stream.

Aromas and flavors: Caramel and dark chocolate
Limited palette but stable in flavors

Catimor variety: cultivar resulting from the hybridization of the Timor hybrid and the Caturra, widespread in Central America due to its interesting yield and its resistance to coffee rust.
Finca Renacer, Nicaragua has developed 40 ha of Catimor
Flavor palette; light roast: notes of spices and brown sugar with a slight acidity; medium roast: aromas of caramel and dark chocolate. Excellent espresso.
Smaller plant, hybrid of Timor and Caturra
High disease resistance, resistant to coffee rust. Widespread in Central America due to its attractive yield.
Its optimal altitude is between 700m and 1000m
Catimor allows for high productivity if well maintained, closely monitored and fertilized adequately, which can be costly
